Firik Bulgur is one of Anatolia's traditional products with a distinctive smoky aroma. Hard wheat is harvested while still green, dried in the sun, and the ears are then smoked. The grains are subsequently separated, yielding coarse, greenish-colored firik bulgur. It is preferred in pilafs, soups, and salads.
